Meat

The "artistes" who cut, cured, and packaged meat products from a variety of sources were a vital part of the early Albany production economy. Most often, these individuals were called butchers.

In 1756, two butchers (Johannes Seeger and Benjamin Williamson) were named on the census of Albany householders taken by the British army.
